Fava and Spinach Dip

A tasty twist on one of your favorites.

Serve this dip with vegetables or a pack of your favorite healthy chips.

Level: Easy


  • 2 c. fava beans
  • 2 lb. fresh spinach
  • 1 Vidalia onion
  • 2 heads of garlic
  • zest of 7 lemons
  • salt and pepper to taste


  1. Preheat oven to 350°F.
  2. Blanch and peel fava beans.
  3. Blanch and squeeze fresh spinach until dry.
  4. Cut both the onion and garlic heads in half and roast until golden and tender.
  5. Purée roasted onion and garlic.
  6. Add dried spinach and lemon zest and purée until smooth.
  7. Fold in fava beans.
  8. Season with salt and pepper to taste.
  9. Serve with vegetables or chips of your choice.
