7 Greek Quinoa Salad

So the husband and I both have some lingering baby weight we'd like to lose, and we're doing it with meal prep! Way back in the day (pre-parenthood), I lost over 50 pounds by meal prepping real, healthy food each weekend. It's the only thing that has really worked for me, so I'm going back to it. ▮ This is lunch for today—my Greek Quinoa Salad (tap @backtoherroots and then the link to grab the recipe), shrimp, roasted broccoli, and dark chocolate. It's about 425 calories and pretty balanced with macros. I'm shooting for right around 2000 calories per day, which, in theory, is enough to keep my milk supply up (yep, I'm still breastfeeding!) while still slowly getting some weight of my aching knees. We'll see! ▮ A lot of people talk about how you don't need to count calories to lose weight, you just need a "lifestyle change". And for a lot of people, that's true. But for me, my lifestyle changed years ago. I eat good quality, healthy, whole foods at every meal—I just eat too much of them. So for me, calorie counting is the (tedious and annoying) way to go. It's just a tool I use for a short period of time to reach a goal. ▮ Reminder: someone's "happy" weight is a deeply personal thing. It's important to note that I think they are plenty of beautiful, strong, and healthy people at all weights and body shapes (including my current weight of 245 pounds). But I know from personal experience that my body feels best about 30 pounds lighter than I am right now. Me wanting to drop some pounds isn't a comment on anyone's body but my own.
