Lemon-Garlic Shrimp and Greens

For shrimp:
  • 2 tsp. olive oil
  • 1 clove garlic, minced
  • 6 jumbo shrimp, peeled and deveined
  • ¼ tsp. smoked paprika
  • zest of half a lemon
  • parsley, minced
For Salad:
  • 1 c. kale leaves, torn
  • ½ c. spinach
  • 1 tomato, chopped
  • 2 tsp. olive oil
  • 1 tsp. vinegar


  1. Heat olive oil in a small skillet.
  2. Add minced garlic and peeled and deveined jumbo shrimp.
  3. Sprinkle with smoked paprika and zest of half a lemon and sauté for 5 to 6 min.
  4. Sprinkle with minced parsley.
  5. Serve with salad: Combine torn kale leaves, spinach, and tomato; drizzle with olive oil and vinegar.
