Scrambled Eggs with Sliced Fruit

  • 1 large tomato, diced
  • 1 whole omega-3 egg, plus 2 whites
  • salt
  • pepper
  • 1 small banana
  • 1 small orange
  • 1 tbsp. ground flaxseed
  • ¼ tsp. cinnamon


  1. Mist a skillet with olive oil spray and place over medium heat. Add tomato and sauté until soft.
  2. Meanwhile, whisk eggs in a bowl.
  3. Add eggs to skillet and scramble until cooked through.
  4. Sprinkle with salt and pepper.
  5. Serve with banana and orange, topped with flaxseed and cinnamon.
