Scrambled Eggs with Mushrooms and Parmesan

Yum-ify eggs with a mushroom and Parmesan mix-in.

  • ½ tsp. olive oil
  • 6 sliced white mushrooms
  • 2 large eggs
  • vegetable oil cooking spray
  • 2 tbsp. shaved Parmesan


  1. Heat olive oil over high heat. Cook mushrooms until golden brown, 4 to 6 min. Add a pinch of coarse salt.
  2. Scramble beaten eggs in same pan, using vegetable oil cooking spray, if needed.
  3. Top with Parmesan.
