Classic Vinaigrette

Ingredients

  • 1 shallot, minced
  • 3 tbsp. red wine vinegar
  • 1 tbsp. Dijon mustard
  • ½ tsp. coarse salt
  • ¼ tsp. pepper
  • ½ c. extra virgin olive oil

Directions

  1. Combine shallot, red wine vinegar, Dijon mustard, coarse salt, and pepper in a jar.
  2. Cover and shake.
  3. Add extra virgin olive oil.
  4. Cover and shake until emulsified.

Keeps in the fridge for five days.

Tarragon Dressing: Add ½ tsp. dried tarragon.

Honey Mustard Dressing: Swap 1 tbsp. honey mustard for the Dijon.

Lemon Dressing: Swap 3 tbsp. lemon juice for the vinegar.
