Monday Lunch: Salmon Over Veggies

This recipe was developed specifically for Dr. Oz's 21-Day Weight-Loss Breakthrough diet plan. To make this for Monday's lunch, you'll need the Prep Day Big-Batch Veggies and the Prep Day Roasted Salmon.

Ingredients

  • 1 1/2 c. baby spinach
  • 3/4 c. Prep Day Big-Batch Veggies (recipe link in directions)
  • 1 Prep Day Roasted Salmon (recipe link in directions)
  • 2 1/2 tbsp. walnuts
  • lemon wedges

Directions

  1. Arrange 1½ cups baby spinach in a container.
  2. Top with ½ cup zucchini and ¼ cup tomatoes from Prep Day Big-Batch Veggies, plus 1 piece Prep Day Roasted Salmon, 2½ Tbsp walnuts, and lemon wedges.
  3. Keep chilled. To re-heat in microwave, remove lemon and add 1 Tbsp water.
