Chorizo-Stuffed Acorn Squash

This acorn squash recipe is hearty and beautiful.

It's basically an autumn version of stuffed zucchini.

Ingredients

  • 2 medium acorn squash, halved and seeded
  • 2 tsp. oil
  • 1 1/2 c. cooked quinoa
  • 1 c. Manchego cheese
  • 4 oz. dried chorizo, finely chopped
  • 1/4 c. mild pickled peppers, drained and finely chopped

Directions

  1. Brush cut sides of acorn squash with oil. On large rimmed baking sheet, bake squash, cut side down, at 425 degrees F for 20 minutes.
  2. Combine quinoa, Manchego cheese, dried chorizo, and pickled peppers. Turn squash over on baking sheet; fill each with quinoa mixture. Bake 15 minutes or until squash is tender.
