Cucumber Mojito

Who doesn't love a healthy mojito?

If you don't have a juicer for the cukes, purée them (cored and peeled) in a blender, then get started.

Level: Easy
Serves: 4-6


  • 1 ½ cucumbers
  • 3 limes
  • sliced mint
  • 2 tsp. brown rice syrup or simple syrup
  • 2 c. sparkling water


  1. Stir together juice from 1 ½ cucumbers with juice from 3 limes, a handful of sliced mint, 2 tsp brown rice syrup or simple syrup, and 2 cups sparkling water.
  2. Serve over ice with mint sprigs.
