If you don't have a juicer for the cukes, purée them (cored and peeled) in a blender, then get started.
- 1 ½ cucumbers
- 3 limes
- sliced mint
- 2 tsp. brown rice syrup or simple syrup
- 2 c. sparkling water
- Stir together juice from 1 ½ cucumbers with juice from 3 limes, a handful of sliced mint, 2 tsp brown rice syrup or simple syrup, and 2 cups sparkling water.
- Serve over ice with mint sprigs.
