An incredibly satisfying snack at just 61 calories per serving.
- 9 c. cauliflower
- 2 tbsp. olive oil
- 1 tsp. coarse salt
- 2-3 tbsp. hot sauce
- 1 tsp. lemon juice
- Mix 9 cups cauliflower florets (from 1 large head) with 2 Tbsp olive oil and 1 tsp coarse salt.
- Roast at 450°F, turning once, until golden brown, about 25 min.
- Toss with 2 to 3 Tbsp hot sauce (such as Frank's RedHot) mixed with 1 tsp lemon juice.
- Serve with Blue Cheese-Yogurt Dip.
